Curse-Breakers are wizards who work for Gringotts Wizarding Bank. Exactly what they do is not known, though the title of their career suggests that they are responsible for deactivating curses that protect treasures which the bank wants to obtain.
The pamphlet for Curse-Breaking given to students at Hogwarts when they are trying to decide what career to pursue after school describes the job as "a challenging career involving travel, adventure, and substantial danger-related treasure bonuses." Curse-Breakers must be proficient in Arithmancy, among other things (OP29).
